Stuffed chicken & country mash
Dressing
- add raisins to cappellari breadcrumbs,
- bind with chicken broth
- make an incision into the
chicken breast & fill with dressing generously
- roast 30 to 40 min. at 400 F
- serve with mash potatoes, asparagus and gravy
Sides
Country mash potatoes
- wash, cut potatoes in cubes (leaving the skin on)
- boil in salted water until soft, strain
in a bowl mix in butter, cream potato seasoning,
fresh rosemary and thyme
- lightly mash with a wooden spoon
