Tramezini breaded and grilled with smoked chicken, tomato and avocado
serves four
For 16 small sandwiches
8 square slices of white toast bread with no crust
12 thin slices of smoked chicken
8 thin slices of tomato
1 avocado thinly sliced
1 cup (250 ml) mozzarella cheese, shredded
2 eggs, whisked
2-2½ cups (500-600 ml) Cappellari breadcrumbs
Build sandwiches with mozzarella cheese in between all the ingredients to help the sandwiches hold together.
Preheat oven to 400° F (200° C), toast sandwiches lightly on an oven tray lined with parchment paper so that they are easier to handle when breading and grilling. Press warm sandwiches together with your hands once you take them out of the oven.
Cut squares once into large triangles then bread by dipping in egg wash then Cappellari breadcrumbs. Grill in a preheated panini press until toasted.
Cut once more into small triangles, plate and serve
